Two Easy Cookie Recipes To Bake During Quarantine
With coronavirus/covid-19 keeping us all at home, baking is a great activity to do during quarantine. Don’t worry if you have never baked before, or do not have many ingredients: here are two easy, low-ingredient, yet delicious recipes for cookies to bake. I hope you give recipes a try;)
Note: Try swapping ingredients depending on what you have available in your home. Being creative with what you already have at your home can prevent going out to stores to buy the ingredients, as it is suggested to stay at home during the coronavirus outbreak;)
1. Four-Ingredient Peanut Butter Cookies
These cookies are soft, and extremely simple. The bright side is that the recipe calls for only four ingredients.
Ingredients:
- 1 Cup Peanut Butter
- 1 cup of granulated sugar
- 1 teaspoon of Vanilla Extract
- 1 large egg
Directions:
Prepping: Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper. Set the baking sheet aside.
After preparing, use a stand mixer or a hand mixer with a large bowl to mix the granulated sugar, peanut butter, egg, and vanilla extract until combined (for 8-10 minutes). The batter may be a little crumbly.
Next, divide the batter using a spoon or ice-cream scooper and roll it in your hands. Take the cookie ball and place it onto the baking sheet from earlier. Gently use a fork to create a criss-cross pattern on the cookie dough. Keep repeating the same process until all of the dough is used. Transfer the baking sheet into the oven and bake for 10-12 minutes or until the cookies are no longer shiny. Let it cool down for 5-10 minutes, then enjoy!
2. Three-Ingredient Shortbread Cookies
Eat these buttery and delicious Shortbread Cookies that only need three ingredients.
Ingredients
- 1 Cup of Butter (8oz) at room temperature
- 1/2 Cup Powdered Sugar, sifted
- 2 cups of All Purpose Flour
Directions:
Prepping: Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper. Make sure the butter is room temperature.
In a large bowl, cream he soft butter and powdered sugar with an electric mixer, until light and fluffy. Add into the bowl the flour and mix until it is just combined–do not over mix the dough. On a counter covered with flour, roll the dough into a 2 by 2 inch log. Wrap the log in plastic wrap and put in the fridge for 30 minutes until firm. After chilling in the fridge, take the log out of the plastic wrap and slice the log into 3/4 inch pieces. Place each cut out round onto the baking sheet and bake until golden (16-18 minutes). Let the cookies cool down and enjoy! These cookies can be stored in a air tight container for up to 3 days.
