Have you ever made a gourmet dinner for your parents? Well I made dinner just last night. But it wasn’t just any dinner. It was a dinner based on leftovers. Doesn’t sound too appetizing now does it? It turned out way better than what was expected though.
Appetizer – Stuffed and Sauteed
I didn’t follow a recipe for any of these dishes but I could give you an estimated amount of the ingredients that I used. For this dish I used one red bell pepper, 1/4 of an avocado (diced), one small red tomato, half of a carrot, mozzarella cheese, one large kale leaf and extra virgin olive oil.
First I cut up the avocado, tomato, and the carrot and sauteed them in olive oil. I them cut off the stem of the bell pepper (but don’t throw it away) and scooped out some of the seeds. Then I sauteed the bell pepper in olive oil. I placed the sauteed veggies inside the bell pepper and then added some melted mozzarella cheese on top of it. To add to the look I also placed a sauteed kale leaf under the pepper with avocado pieces surrounding it.
Main Course : Salmon Cakes/Patties
This is basically a variation of the classic crab cake but with a twist. I wasn’t planning on making salmon cakes at first, until I realized that we had leftover salmon in the fridge. It’s really hard to make leftovers taste as good as they were when they where just cooked.
Mom- ” The best crab cake I’ve ever had, first salmon cake I’ve ever had.”
Dad- “Amazing, much better than regular salmon, the flavor just pops!”
Just like the Stuffed Pepper, I totally made up this dish. All you need is some salmon, and egg, Mexican 4 cheese ( I used shredded cheese), some avocado, diced almonds, herbs, almond flour, and finally extra virgin olive oil.
Fist mash-up the salmon (make sure the salmon is already cooked) then just sauté the salmon, egg, herbs, cheese, avocado, and the almonds in a pan with oil. Mush all of them together to make patty like shapes after it cools down a bit.
Then dip them in olive oil and then in almond flour (or regular flour) to give them a crunchy taste. Finally put them on the pan once more until they become a bit more crunchy. You can serve it with any sauce you want, I served it with European organic sour cream.
Dessert- Strawberries and Grapes
The dessert wasn’t anything too special. I just took a strawberry and a grape and stuck them on a toothpick. I made one of those for each person and stuck a lemon slice in the middle of the plate, and I sprinkled the lemon with sugar (I didn’t sprinkle the fruits, but you can if you want to).
That’s about it. You don’t need to follow a recipe every time you cook. Sometimes your imagination will make for a much more delicious meal than a cookbook.
